It is the most appreciated and popular of the traditional varieties of escarole that are grown in Catalan orchards. Small in size and low productivity, its best yields are obtained in cold and dry winters.
It is a variety of endive (Chicorium endividae) with thin leaves, very toothed and curly, light green in color. The bush is small in size, between 20 and 25 cm in diameter. The main characteristic is its great finesse and little bitterness, as well as the consistency of the leaves, which make it a product of excellent taste quality. Salad with oil, vinegar and salt is usually consumed, and accompanied by all kinds of ingredients, but also in the form of an omelet. In recent years, numerous restaurants in the Garraf region have incorporated it to make the popular xató.
It is sold in markets and greengrocers in Girona and Garraf regions and, occasionally, in other parts of Catalonia.
The endive is mainly water, fiber, vitamins B1, B2, B9 and C, and minerals, highlighting its potassium content. Like most green leafy vegetables, it must be present in our diet on a regular basis and is especially recommended for women of childbearing age or in the first months of pregnancy due to its content of folic acid or vitamin B9.
