It is a winter crop, very resistant to extreme temperatures, characteristic of some populations of La Cerdanya.
It is a plant of the cruciferous family, with fleshy roots and yellow flowers. The root of the Talltendre turnip, the edible part, has a pulp of whitish coloration, while the skin is dark brown. The composition of the calcareous soil gives a peculiar taste to these turnips, which stand out for their finesse and intensity. Although they are all called Talltendre turnips, those that have been grown in dry land are usually preferred.
It is marketed, in season, in market stalls and shops in La Cerdanya.
The turnip is a vegetable that, like the rest, provides little energy, since its main component, more than 90%, is water and provides only about 5% of carbohydrates. It is rich in fibre and, therefore, regulates intestinal transit. Although its content is not the highest, it also provides a wide variety of vitamins and minerals, such as vitamin C and folic acid, or potassium and phosphorus. These nutrients are completely necessary for good growth and physical and mental development.
