The cake and bread of Sant Jordi are recent ideas, created by the Guild of Bakers of Barcelona. which have been imposed since the 1980s to provide the Diada de Sant Jordi, on April 23, with their own bakery specialties. Some bakeries also make them for National Day on September 11.
It is a designer bread that represents the coat of arms of Catalonia, four red stripes on a yellow background. Made with great care from three pastries: walnuts, sobrasada and cheese, it makes it a tasty and aromatic bread. To make it, the three doughs are kneaded with flour, sourdough, butter, sugar and salt that are left to ferment for an hour. The cheese and sobrasada pastes are laminated, which are alternately distributed over the walnut paste and baked.
It is sold in bakeries and bakeries, especially in Barcelona, for the day of Sant Jordi.
