Bring milk to a boil with cinnamon, sugar and lemon peel.
When the boil starts, add the rice and stir from time to time so that it does not stick. Let it brew until a little pasty.
Remove cinnamon sprig and lemon peel.
Variations:
It can be made with almond milk instead of cow's milk.
A little cinnamon can be sprinkled on top when serving.
It can be served on an individual plate or in silver.
