Almond milk

Halal Vegan Vegetarian

    • 600 g of raw peeled almonds
    • 400 g sugar
    • 1 lemon crust
    • 1 cinnamon sprig
    • 50 g rice flour
    • 1 l of water

    • Preparation

      "The almonds are cocooned and mixed with sugar.

      The almond paste is placed inside a large mesh cloth filter.

      This filter with the paste is put into the water and has it infused for at least 6 hours. Then the fabric filter is squeezed to recover all drops of the liquid.

      The resulting liquid should simmer for about three-quarters of an hour, before adding sugar. Then the lemon peel and cinnamon are added, and the cooking is kept for another hour.

      The lemon peel and cinnamon are removed and cooking is maintained for another two hours."
